I have always enjoyed hot and spicy food but since living in San Antonio I have become more exposed to a vast variety of peppers both fresh and dried. My favorite has to be the Chipotle made from Tipico variety of jalapenos. I buy them dried and rehydrate them. I decided to find a cookbook dedicated to this delicious pepper and ordered this one.
First let me say that this is a small book, about 6"x5" and cut into an odd shape (resembling a pepper I guess). There are no photographs inside of the book which is a shame as photos often inspire me to make a particular dish. The first 27 pages of this little 90 page book are dedicated to giving the reader the definition, history and varieties of Chipotle peppers. The recipes follow and are divided into these sections: * Sauces, salsas, condiments and a drink * Appetizers and Breakfast * Soup and salads * Main courses My favorites so far have been the Smokey Mayonnaise (I substituted freshly made mayonnaise for the prepared variety used in the recipe), Smokey Chipotle Pesto, Chipotle Chilaquiles (which I think is also called Migas) and the Tournedos Chipolte. The book ends with a section that list resources for some of the ingredients used in the cookbook. Although I am happy with my purchase I would have liked it better if it was bigger, was shaped like a regular book so it fits into my bookcase better, had more recipes and included photos so I am giving it 4 stars.

The most important thing I gleaned from this book was the what the word "chipotle" means..
It is the word "roasted". Any pepper, according to the book, that is roasted; is a chipotle pepper.

This is a great little book, it even has a recipe for chipotles in adobe and living in a small town I am unable to fint these locally, so now I can make my own, I highly reccomend this little book!

love the stories and the authentic recipes. i had seen this book at a friends house and loved the "chipotle pesto" and had to find it !!!
