Fish & chips was not something we usually cooked at home because we had three chippies within easy walking distance. But I did learn to appreciate good fish & chips.

Later in life I moved to Canada and opened my own restaurant. One of the most popular items on the menu was fish & chips cooked the way I show you in this booklet.

I used the recipe for the fish last night and I think there is a typo. The recipe called for two cups of flour and six ounces of beer. I followed the recipe and found that there was not enough liquid, even with the two egg whites (large eggs); I ended up putting sixteen ounces of beer into the batter and it worked well, even though it was lumpy. I even tried it with mushrooms and they were good, too. I will make this again (although two cups of flour is too much for two people) but will put the full bottle of beer in right away. I liked the idea of salting the water for the chips and then pre-cooking them. I put them into a warm oven to keep warm while the fish cooked. Even though there is only one recipe, it was worth the cost of the book to have an authentic English fish and chips night at home.

I followed the recipe to a "tee" but the end result was a dough, not a batter. I still tried to wrap the dough around the cod, but ended up with a gloppy mess.

One reviewer gave the recipe a kind review in March 2012, asking if there was a typo in the recipe. To date, no response from the author. Think twice before you pay for this recipe and note that 3 of the 4 "5-star reviews" didn't appear to even make this recipe.

I have tried several different fish & chip recipes with poor results, one was hardly edible. I was excited to see this book offered for free and tried it right away. It came out amazing!!! I used fresh cod and the batter was very light and the fish nice and flaky, absolutely delicious! The kids asked for seconds and thirds!
I noticed in some earlier reviews that there may have been a typo but my recipe called for 2 cups flour and a 16 oz beer and I had enough batter to coat. 15 pieces of fish with plenty of batter left over. The consistancy was perfect.
end result was amazing!
The chips were really fine soaked in salted water but next time I make this I will prince before frying.

(Kindle edition) I recommend this brief book for those who would like to try their hand at making fish and chips at home, rather than having to rely on takeout from chain restaurants, where the results often vary from location to location. The author explains the different types of fish one can use for making the batter-dipped fish pieces (my favorite type is cod, which is a favorite of the author as well), the type of oil to use, how to prepare the chips (french fries in America), and what type of cooker to use. The author explains in detail how to make the batter, how to dip the fish, and exactly what to look for in a piece of deep fried fish ready for the plate, as well as how to serve the results (newspaper cones are optional). You might find a longer book, but the recipes and the techniques work!

I love to eat fish and chips and now I can't wait to make it the English way. I have always tried to get the batter just right but could never really get it perfect. Lucky for me Geoff includes his own personal beer batter recipe which is easy to follow.

I had never heard of putting the chips in salted water before cooking, tried it and made chips like I remember them when I was a kid and used to get six penny worth at the chippie.

Geoff Wells was born in a small town outside London, England just after the 2nd World War. He left home at sixteen and emigrated to Canada, settling in the Toronto area of Southern Ontario. He had many jobs and interests early in life from real estate sales to helicopter pilot to restaurant owner. When the personal computer era began he finally settled down and became a computer programmer until retirement. He has been married to his wife Vicky since 1988 and they split their time between homes in Canada and the island of Eleuthera in The Bahamas.
