This book represents some of my best and easiest chocolate cake recipes. The recipes that I have included have been thoroughly tested, tasted and enjoyed. Based upon feedback from clients, friends and family, I am confident that Chocolate Lovers everywhere will have as much fun working with these recipes as I have had developing and utilizing them in both professional and family environments.
As a homemaker and a Mom, these are cakes that I made with my children; made for my family, friends and colleagues. They were enjoyed at family gatherings, at potlucks and school functions, and even at parties. As a pastry and culinary chef, these recipes were used with confidence and pride. What I have learned as a chef is that many recipes can be simplified and changed to suite any occasion. I have passed on these recipes, tips and techniques to my daughters, my family and my friends, with my colleagues and the amazing student apprentices that I was privileged to work with. And now I want to share them with you! These recipes work. I want you to be the hero when you serve these chocolate cakes.

This book has a unique format to help you simplify the making of delicious cakes:
I have provided CHEF TALK at the beginning of each recipe. This little blurb provides tips and techniques to help you gain greater insight into the exciting world of chocolate desserts, as well as giving information with respect to why it is easy and delicious.
In the section entitled, WHAT ELSE CAN I DO WITH THIS RECIPE? I have explained how you can easily adapt the recipes to make them your own.

There's detailed information about the author. There's an introduction. There are baking tips at the beginning of each recipe. There's a hyperlinked table of contents. These are good signs!

The recipes are straightforward and include all the necessary information (pan size, greasing, etc.) The first recipe is a relatively basic cake, which the author then gives information about dressing up with fillings, toppings, and additions. Nice!

Some options call for a springform or tart pan with a removable bottom. I do not have either. I believe I must remedy this - soon.

Alas, I did hit one small snag. The author says, in the text for the almond cake, "similar in technique to the Crunchy Chocolate Pecan cake recipe previously presented." The pecan cake is included, it's just *after* the almond cake. There's another recipe referring to the pecan cake which precedes its appearance in the book.

Following the recipes, there are definitions and explanations of terms and concepts used in the book and baking in general.

The recipes sound wonderful, and more importantly, they sound like I can tackle them. I appreciate the educational information, ESPECIALLY the information about egg yolks and sugar.

I really, really liked this book and am going to keep it and (hopefully) put it into use soon.

I have tasted the double chocolate raspberry torte and the chocolate pecan crust is a wonderful foil for the rich filling and is one of the most luxurious desserts I've ever enjoyed. The fact that it can be made ahead and frozen is perfect for entertaining, having dessert taked care of before the day of the dinner is my idea of keeping it all together and feeling relaxed for my guests.

At first I was reluctant to try the recipes after reading fancy words like "Torte", "Anglaise" and "Financiers". I enjoy baking but I'm a novice baker: standard cakes and cupcakes and etc. However I do love challenging myself so I was ready to tackle this book.

I found the recipes easy and simple to follow which was encouraging. The "Chef Talks" provided useful tips and suggestion. I thoroughly enjoyed reading the Learning Tip section. My favorites were the Egg Yolk-Sugar Phenomeon Experiment which led to the Meringue technique. I've been trying for years to make meringue but have never been able to master the technique. The author's Egg White/Sugar ratio was spot on and the tips were helpful. The first batch I made was a success!

The first dessert I made was the Chocolate Walnut Financier. I was surprise that there were only a handful of ingredients needed. This made the entire baking process just under an hour. The end results were a sensation! My house was filled with the fragrance of chocolate which made the designated Taste-Tester drool in anticipation. The first bite of the Financier, I was hit with a mixture of chocolate and walnut flavours and the moist texture. It was so delicious I immediately gobbled it up! Not to mention by Taste-Tester did the same!! The Chocolate Walnut Financier will be my go-to dessert if I am ever in a pinch to whip up something quick.

I highly recommend this book to novice to professional bakers. These desserts suit any settings, from a home to a restaurant.

My next attempt will be the Double Chocolate Raspberry Torte with Chocolate Pecan Crust and then the rest of the book!

These are great recipes! This book is exceptionally well laid out and there are a lot of really useful tips to help the novice baker as well as those that are more experienced. You are bound to improve your baking experience while making some yummy desserts!

I am usually hesitant to make what I view as complicated fancy desserts (especially when they involve relatively expensive ingredients-I shutter at the thought of wasting a whole pound of chocolate on a venture that will likely fail). This book provides just the right number of easy to follow recipes which can then be made into a whole lot of other great desserts with the addition of sauces and fillings. The comprehensive learning tips in the back along with the "chef talk" make it all a lot less daunting. It is like having a experienced chef at your side and I feel a lot more confident about proceeding. My first attempt "The Double Chocolate Raspberry torte with Chocolate pecan crust" was fabulous and my daughter is including it in her dessert selection at her cafe. Looking forward to experimenting with the other recipes and their variations.

Everybody who loves chocolate must have this book, its delectable!
The tips and techniques and chef talk are invaluable and a wonderful resource. I feel like a professional now!
Imagine being able to make a chocolate cake that looks beautiful and tastes to die for! I love how there are so many ways to put a new twist on the original recipe with different bases, sauces, and fillings.
Easy ingredients, delicious recipes, gourmet results!
I noticed there are additional measurements for the professional in a kitchen, too.
This is a book that is just like chocolate- Irresistable!
Can't wait for more volumes.

Denise Paré-Watson invites you into her world of the culinary arts. Her passion for food and nutrition was developed early in her life, whether it was helping her father tend his extensive garden, or helping to prepare nourishing meals with her mother in the French Canadian tradition.
Denise truly discovered her passion when she chose to enroll in a professional cooking program as her second career. Her time at the Southern Alberta Institute of Technology (SAIT) allowed her to excel, with Denise earning highest honors and achieving President's List status in the Professional Cooking Program. She was awarded a scholarship to continue her education in her true culinary love - the pastry arts. Once again, her skill and her artistic flare became evident with her graduating as the highest achieving student in the Pastry Chef Program.
She built her expertise with roles in Alberta, Canada such as Pastry Chef at the prestigious Calgary Golf and Country Club and Chef-de-Partie at the Calgary Hyatt Regency Hotel. During that time, she prepared desserts for such dignitaries as former Canadian Prime Minister Jean Chrétien; former U.S. President Bill Clinton; numerous international corporate and political leaders; and distinctive desserts for Bocuse D'Or and Chaine de Rotisseurs elite fundraising dinners. As well, she was asked to be part of Culinary Team Alberta during the 2004 Culinary Olympics in Erfurt, Germany, where the team distinguished itself by placing fifth in the world and coming back home to Canada with Gold and High Silver medals.
Denise has actively participated in numerous culinary activities that have promoted the growth of education in her profession including: serving as a board member for the Southern Alberta Institute of Technology Baking and Pastry Arts Advisory Board, and as an Executive Board Member of the Alberta Pastry Chef Guild. She is an active member of the Canadian Culinary Federation (CCFCC). She continues this promotion of learning and sharing by networking with colleagues and student protégés, teaching customized cooking and baking classes and creating specialty Artisan jams, jellies,chutneys and spice blends.
Currently, Denise resides on Vancouver Island, British Columbia, where she manages her business, Urbnspice, and is an active food blogger ( and food writer.
