Cheese Strata

2 T. butter
8 slices bread
8-oz. pkg. shredded Cheddar cheese, divided
8-oz. pkg. shredded Swiss cheese, divided
1/4 c. green onion, chopped
pepper to taste
4 eggs, beaten
2 c. milk
2 T. butter, melted


Arrange 4 slices bread in a greased 13"x9" baking pan. Sprinkle one cup of each cheese over bread. Top with one tablespoon green onion; add pepper as desired. Repeat layering with remaining bread, cheeses, onion and pepper. Whisk eggs, milk and butter together. Pour evenly over layers. Cover tightly with aluminum foil and refrigerate at least 6 hours to overnight. Bake, uncovered, at 325 degrees for 40 minutes. Serve hot. Serves 4 to 6.

Unlike so many others of these free cookbooks, this book has more than 10-20 recipies for you to try. There are breakfast casseroles, soups, stews, gravies, and sweets! Even better is that the book starts with personal stories that set off the holiday mood and cute pictures to keep up the Christmas Spirit. Worth the download!

I have to admit that I wasn't expecting much from a free cookbook, but this one actually has recipes in it that I've actually been wanting to try.

Are you dreaming of snow for Christmas? Do you long for the aromas of Christmas baking? Then you will be interested in this cookbook. I think we all love Gooseberry cookbooks because it is so cozy to read them. This one is especially filled with Christmas memories and tons of recipes. There are also plenty of decorating tips and lots of adorable illustrations. The book begins with stories and progresses to breakfast and brunch recipes, appetizers, soups, main dishes and desserts. Most of the recipes serve four, six or eight. There is one recipe for one in case you just want to make a cup of cocoa for yourself. Some of the most interesting recipes include:

Cheese Fondue
Juice made in a Slow Cooker - apple juice, pomegranate juice and orange juice with cinnamon sticks
Salmon Loaf Dip
Tortellini Soup
Rosemary-Garlic Turkey
Chicken Kiev
Tiramisu
Eggnog Pound Cake
Cherry Punch

While these are all recipes I want to try I started off making the Mocha Muffins. Instead of using instant coffee I used two teaspoons of King Arthur Flour's espresso powder. I also used Penzy's cake spice in place of the cinnamon. So you can see these can be adapted to your tastes. I just bit into one of the mocha muffins and can I say yum! It is an adult taste so you might not want to make these for kids unless they like coffee. To make exactly twelve muffins use a Ľ cup measuring cup and use a small spatula to scrape the batter into baking cups. The muffins have a moist crumb and then you get a burst of chocolate from the chocolate chips. Very satisfying. I think you'll love this cookbook.
