This features 75 seasonal salads, each illustrated with a full-page color photograph, from the cofounder of New York's Glorious Foods caterers and author of Christopher Idone's Glorious American Food ( LJ 12/1/85). Some are as extravagant as the Duck and Foie de Canard with Hunter's Sauce, others are as homey as Parsley and Bulgur Salad; some are as elegant as Braised Sweetbreads and Quail Eggs with Mache, others as simple as Coleslaw. All are well conceived, beautifully presented, and suitable for entertaining and special occasions. Idone's latest picture book is a bargain at the price.
