Mexicali Meatloaf
 
2 slices day-old bread
2 eggs, beaten
1 c. salsa
1/2 c. tortilla chips, crushed
1/2 c. green pepper, chopped
1/2 c. onion, chopped
1/2 c. celery, chopped
1 jalapeño pepper, seeded and chopped
6 cloves garlic, minced
1 t. pepper
1/2 t. Italian seasoning
1/4 t. seasoned salt
1 lb. ground beef
1 lb. ground pork
 
Arrange bread slices in an ungreased 9"x5" loaf pan; set aside. In a large bowl, combine remaining ingredients except beef and pork; blend well. Add beef and pork; mix well. Form into a loaf and place in pan. Bake, uncovered, at 375 degrees for 1-1/4 to 1/12 hours. Invert meatloaf onto a serving platter; discard bread. Let stand for 5 minutes before slicing. Makes 8 servings.

I love these little Circle of Friends cookbooks. I buy them for my Kindle so I have whatever kind of recipe I want at my finger tips without clogging the shelves with more hard copy books. We love chili and all of the Circle of Friends recipe books pretty much hit our yum spot. I really like that the books are based on a specific type of food. We usually know what we have a yen for, and this way I can go to a simple book for ideas. The recipes use basic ingredients and are mostly very easy to cook.

Tasty recipes...at least six ones to try this winter. Several more unusual chili's...pumpkin, multi chicken and vegetarian options. Recipes are are simple, unadorned with lots of steps and make liberal use of slow cooker and Dutch oven prep for busy people.
