Garden Quiche
 
1 T. butter
1/4 c. onion, finely chopped
2 t. green or red pepper, chopped
1 clove garlic, minced
1/2 lb. yellow squash, thinly sliced
1/2 lb. broccoli flowerets, coarsely chopped
2 eggs, beaten
1/4 c. milk
1/8 t. cayenne pepper
1/4 t. dry mustard
1/4 t. dried marjoram
1/2 c. shredded Swiss cheese
2 T. grated Parmesan cheese
 
Melt butter in a skillet over medium heat. Add onion and green or red pepper; sauté until soft and golden. Stir in garlic, squash and broccoli, cover and cook for 3 to 5 minutes, just until tender. Whisk together eggs, milk and seasonings; stir in Swiss cheese. Pour mixture over vegetables in skillet; sprinkle with Parmesan cheese. Reduce heat to low. Cover and cook for 5 minutes, or just until eggs are set and cheese has melted. Cut into wedges to serve. Makes 2 to 4 servings.

Gooseberry Patch always comes through, and I've been totally satisfied in my collection of their cookbooks thus far. I never had a cookbook, specifically for pies and cobblers, but happy I chose this one. There are 25 mouth-watering recipes with helpful tips, and number of servings per recipe. In addition, there are easy to make toppings that are an added bonus.

Some of the recipes are: Raspberry Crumble; Rustic Peach Tart; Apple Blush Pie; Tried And True Pecan Pie; Peanut Butter Strudel Pie; Gingersnap Pumpkin Pie; and more.

We made the Luscious Blueberry Pie, and the Amish Cream Pie. Both were a sensation. Next, we plan to make the Mile-High Lemon Meringue Pie. We will leave updates with new recipes we make. I will be sharing these delightful recipes with friends and family for the holidays. Highly recommended!
