About the Author
Tom Griffith is the Executive Chef of Chez Tomas Culinary Services, an exclusive San Francisco Bay Area catering company he founded in 1980. His training includes the California Culinary Academy and Le Cordon Rouge. He has developed recipes for nationally prominent clients, and has operated the Mira Monte Marina Oyster Bar and Restaurant in Novato, California. His original recipes have been published in Bon Appetit magazine.
