This was my first experience with american cookbooks in the 80's and I was amazed on how precise the recipes were, in my country where the approach to cooking is mainly intuitive,traditional,(most recipes go around by word of mouth) and exact measurements are not really given, I thought this book was a treasure! The recipies are elegant and sophisticated, and if you follow the instructions to the letter, you will never be disappointed, the only reason why I only gave it 4 stars is because although mostly vegetarian, It includes recipes using chicken broth, ground beef, and other meat products, which are now easy to substitute by their vegetarian equivalents without really altering the flavour.
