Clever and Delicious Cooking – Simple Life Corp

Following are some sample recipes. Enjoy!

BROILED CHICKEN PATTIES
___________________________________________
½ c. crushed dinner crackers
½ tsp. salt
1/4 tsp. pepper
2 c. ground or minced cooked chicken
½ c. milk or cream or evaporated milk
1 egg yolk, beaten
Melted butter or margarine
Slices of American cheese if desired

Mix crackers, salt, and pepper in small bowl. In separate bowl, blend chicken, milk, and egg yolk. Add cracker mixture and toss well. Shape into four patties. Place on aluminum foil lined baking sheet, brush with butter. Brown under broiler (about 3 minutes), turn; brush other side with butter and brown. If desired, add a slice of cheese and continue browning until soft, but not melted. Serve on hamburger buns with mayonnaise and lettuce.

Variation: Substitute bread crumbs for crackers.

CHEESE AND BACON CASSEROLE
___________________________________
What a delicious way to make use of those strips of bacon left over from breakfast.

2 c. elbow macaroni
6 strips bacon, cooked crisp and cut into ½ inch pieces
1/3 c. chopped onion
1 (10 oz.) can cream of mushroom soup (reduced fat works fine)
1 (3 oz.) can sliced mushrooms
2/3 c. milk
2 c. shredded Cheddar cheese (reduced fat ok, but not fat-free)
2 c. frozen peas and carrots, thawed
½ tsp. salt
1/8 tsp. sage
1 tsp. parsley flakes

Preheat oven to 3500. Cook macaroni according to package directions. Heat bacon and onions in skillet. Stir in soup, undrained mushrooms, and milk. Drain macaroni in strainer and return to saucepan. Stir in soup mixture, cheese, peas and carrots, salt, sage, and parsley flakes. Mix well. Pour into greased or sprayed 1-1/2 quart casserole dish. Bake for 45 to 50 minutes. Serves 6.

I have tried several recipes in this book and I was pleased with the results of each one! I especially liked the hints and the recipes using simple ingredients, such as the Applesauce Recipe and the Cheesy Toast Sticks recipe.

This cook book has excellent and very easy to use recipes in it. It also has lots of helpful hints. This would be an excellent gift for a new bride or someone who has a family. I would recommend this to anyone who has to cook!!

Wow! This cookbook has such a nice variety of recipes. My family especially liked the Beef and Taco Bake and also the Beef Barbeque Sandwiches (made from leftover roast and slow simmered to mouthwatering perfection). We also liked many of the cookie recipes - Champion cookies, Happy Kid Cookies. Also appreciated the icing recipes - sure beats canned frosting. It's a nice mixture of super easy, super fast recipes and recipes that are still easy and fast but more involved. Oh, yes, we really like the French Toast Casserole. That came out like something from a gourmet restaurant.
