About the Author

Author Velda de la Garza, MS, RD resides in McAllen, Texas and provides nutrition consultation with her husband who is a cardiothorasic surgeon. Her Hispanic heritage gives Velda a first-hand knowledge of typical Mexican foods. A registered dietition, she is keenly aware of the health problems affecting Hispanics due to excess calories, fat and cholesterol. Velda feels a strong need to promote better health for this population as well as inspire others to eat nutritious Mexican food. Velda received her Bachelor's degree in Nutrition from the University of Texas as Austin and completed her dietietic internship at St. Mary's Hospital of the Mayo Clinic in Rochester, Minnesota. She earned a Master's of Science degree in Nutrition from Texas Woman's University. Now with her own private practice, she uses her knowledge of nutrition and her love of Mexican food to help others share in healthy Mexican cuisine.
