This covers all the biggies but shows its age--recipes call for huge amounts of oil, lard, and other fats. Most Chilean cooks have long since left this behind. But if you want recipes for Chile's most famous dishes: pastel de choclo, humitas, empanadas, and an endless variety of stews, you'll find them all here.
