When I downloaded this book I was hoping for recipes that used Almond and Coconut flours as the main flour ingredients. What I found is that the author uses what is referred to as a purchased gluten free flour mixture in almost all the recipes. The almond and coconut flours are used in very small amounts in each recipe. I believe the title of this book is very deceptive as the almond and coconut flours are simple secondary ingredients to the "gluten free flour mixture" the author refers to in each recipe. A question for the author: you never say which purchased gluten Free flour mixture you are referring to...which one did you use for these recipes?

I downloaded the book looking for paleo recipes using coconut and almond flours. The title is deceptive. Dont download the book if you are expecting paleo recipes. Nearly all of the recipes use 'gluten-free' bean based flours as the primary binder and add a little coconut or almond flour to it. That being said, the recipes are definately more paleo friendly than wheat based flour recipes, and the recipes look wonderful. Every one of them is something I would actually make. If you're living a paleo lifestyle and want something for healthier cheats from time to time, it is worth checking out.

I thought oh great a book that might really help understand the difference of using these flours vs wheat flour....the recipes use these flours but then also a "gluten free flour blend" BUT IT NEVER TELLS WHAT THAT BLEND IS! ANNOYING!

The title would suggest you'll find recipes using coconut or almond flour. Well yes, they are present in the recipe but as an extra. All recipes ask for 'gluten free flour' which you should buy in the supermarket. You need to use for example 3/4 cups gluten free flour and only 2 tbspoons coconut flour. I am not going to make anything from this book.

My roommate is gluten free so I've seen these flours in our pantry and wondered how to actual incorporate them. I fully intend on making the banana spice waffles to test it out. I'll probably experiment with some of the desserts too. Overall awesome selection, clear directions, look forward to eating some of these dishes..
