Book Description

PERFECT FOR DIABETICS, DIETERS AND LOVERS OF GREAT CUISINE!

Coconut Cuisine featuring Stevia is the new cookbook from natural foods chef and writer, Jan London. 130 innovative, yet simple vegan delights offer fresh ideas for gourmet palates of both traditional and raw cuisines. Within each recipe, Jan weaves two of nature’s most precious gifts - coconut, which contrary to myth, is one of the healthiest foods on earth and stevia, the herb that is up to 300 x’s sweeter than sugar, with a 0 glycemic index and O calories. Jan’s careful assembly of yin yang balance, inherent in each dish, reveals her focus on food as a form of healing. A nutritional facts chart is included with each recipe for the diet conscious. Jan’s original creations have been inspired by her years of studies in the Far East and Europe and by those humble kitchens from around the world. Recipes such as: Apricot Coconut Spread, Cool Cucumber Mint Soup, Pomegranate Salad, Coconut Sour Cream, Lotus Root & Garlic Chives, Mango Creamsickle, Blackened Tofu Cutlets and Sumptuous Carob Cream will convince you that healthy eating never tasted so good.

Editorial Reviews

Review

"Jan provides sound, practical advice on how to use two of nature's prize foods. I highly recommend this book." -- Dr. James Krystosik

About the Author

Jan London travelled to the Far East and lived in Europe for twelve years to learn more about the healing nature of foods. She studied macrobiotic cooking in harmony with Taoist principles and expresses these insightful teachings through her cooking. In Sri Lanka she discovered the nourishing properties of coconuts and when back in the U.S. was introduced to stevia. After experimenting with stevia's different forms, Jan decided to combine two of nature's prize foods to promote good health and good cuisine. --This text refers to an alternate Paperback edition.

1.0 out of 5 stars Unrealistic, November 6, 2006

(REAL NAME)
I purchased this book on the fact that is uses stevia instead of sugar, but many of the recipes still call for flour, which is converted into sugar in our intestine. What's the point? I guess I expected more, like maybe the use of coconut flour? And many of the recipes use ingredients like kombu, umeboshi paste, hijiki, wakame, sunchokes, fresh lotus root, quinoa, etc. Where does one get this stuff????????? Not where I live, that is for sure. These recipes are very unrealistic, not difficult, just not realistic. And many of them use soy. So if you are on a SCD, grain-free, or soy free diet, pass this one up.
