I use a 1/4 cup coconut flour, a cup of oatmeal, a teaspoon of baking powder, a 1/4 cup or 1/2 cup of sugar, 1/2 teaspoon of salt, 2 eggs and 1/2 cup of milk (i don't actually measure...so the milk might be a cup)...and blend it all together and make pancakes. Everybody loves them and we are all getting fiber.
This is a great company to order from. Very happy with their quality.

I bought this and the coconut cookbook at the same time. I've tried 6 various muffin/cupcake recipes with it, it's a whole new way of baking (1/4 cup of coconut flour for 6 muffins and no other flour, lots of eggs, and healthy sweetener like honey...). It takes a little getting used to, but I really like it and it's so much more healthy for us than the traditional stuff. I even tried the batter for fried fish in coconut oil, yum! And you may think it would taste heavy with coconut, but it really doesn't. I'm glad I tried this, we really like it.

This coconut flour is great! I'm highly allergic to wheat and can't partake of favorites like, pancakes, bagels, bread etc but not anymore. There are so many Paleo and gluten free recipes out there that use coconut flour in place of wheat. It tastes amazing and you get that bready feel so you don't miss it. And it makes the best coconut flour pancakes! Yum! Also Wilderness Family Naturals is a trusted company and I have no problems ordering from them.

I'm doing the GAPS diet (no grains, no refined sugars, no lactose), and coconut flour is my favorite "safe" ingredient.
This coconut flour is absolutely delicious. It is ground up into a very fine powder. It has a slight smell and taste of coconut (which makes sense), but it doesn't make everything taste overwhelmingly like coconut. It substitutes quite well for flour; the texture of batter is more runny, but at least in recipes that are already adapted for coconut flour, it is possible to come out with a finished product that has a somewhat bread-like consistency. The other non-grain "flour" that I use regularly is almond flour. Between the two, I much prefer this. (My husband doesn't really care for coconut, so he likes the almond meal better.) Some of the recipes that I've been making a bunch with this flour are: Carrot Muffins (on the Well Fed Homestead blog), and grain-free, dairy-free brownies (on the Cheeseslave blog). Highly recommended! I like that this stuff is organic, too. |
