This is the best cookbook for Turkish food available in English. Algar is a master at walking you through to delicious dishes with encouragement along the way (so like Turks in general; kind and generous).

I use this book regularly but I did come across one recipe with an error. On page 275 and 276, for Revani Dessert. I believe the amount of flour and semolina are mis-printed. It should be 2 cups flour and 1/4 cups semolina. My Revani was dense and didn't soak up the syrup at all.

This is an incredible cookbook. Quite frankly, after using this I have little patience for other cookbooks. If you follow the very clear instructions, you will make dishes as good or better than you can get in restaurants in Istanbul. I won my Turkish husband's (and his parents') hearts by cooking dishes from this book. We've been together 20 years now and I still cook very regularly from this book.
