The Complete Book Of Vegetarian Cooking is a coffee table size cookbook full of lavish color photos of mouth watering vegetarian recipes from many cuisines. Recipes are brief, one page, almost dwarfed by the tempting full page photos. A handy feature is the listing of ingredients and garnishes at the left side of the page of the recipe. Recipes are divided into easy numbered steps, some of which are illustrated with photos at the bottom of the page. The Complete Book Of Vegetarian Cooking has excellent layout planning in general. In addition, the introduction contains valuable information regarding nutrition for vegetarian cuisine plus s suggestions for vegetarian shopping lists and the Vegetarian Store-Cupboard. The remaining chapters are organized into Starters and Salads, soups, Snacks and Light Meals, Pasta, Grains and Legumes, Stir-Fries and Sautes, Casseroles, Bakes, and Roasts, Barbecues, and Desserts. Some recipes that appeal to eye and palate are Moroccan Orange &Couscous Salad, Carrot & Cashew Nut Coleslaw, Avocado & Mint Soup, Eggplant & Mushroom Satay with Peanut Sauce, Stir-Fried Greens and Grilled Haloumi (a Cypriot cheese which "remains firm, takes on a marvelous flavor when swiftly barbecued"), and Winter Vegetable Cobbler with Tomato and Red Onion Salad. For dessert, there is Blackberry, Apple & Fresh Fig Compote with Honey Yogurt, Boston Chocolate Pie, and Passion Cake. Studded with sparkling gems of vegetarian cuisines, The Complete Book Of Vegetarian Cooking is a beautiful cook book for all kinds of vegetarians, even half hearted ones. One thing I would like to suggest is to list the nutritional values per serving for each recipe, but this is a minor note. It contains a flavorful spread , a survey of vegetarian delights.

This is a great book that teaches you what to keep in your cupboard and put on your shopping list to get the proper nutrition as a vegetarian. The recipes are good. I do, however, add a little more green, leafy vegetables to many of the dishes. I loaned out my first copy to a coworker who was interested in vegetarianism. She never gave it back. I'm not a vegetarian anymore, but I often like to make dishes that do not focus on meat. It's a great book to increase variety in your dishes!
