Out-of-print in this format, this book is out there under the 2002 re-print titled "Vegetarian and Vegetable Cooking: The definitive encyclopedia of healty vegetarian food" Combining some great old favorites like winter casserole with herbed dumplings, grape leaves, and gazpacho with new and exotically named dishes like green lentil kulbyaka and tagliatelle with spinach and soy garlic cheese the recipes in this book are outstanding both in their freshness and ease of preparation. It even includes some great "comfort" dishes in full vegetarian cover including shepherdess pie, stuffed squashes, artichokes, eggplants, etc, and chili con queso. Fully illustrated with beautiful step-by-step and finished-dish color photos. The added umph! in this book is an entire section covering the most common veggies and their varieties, how to use and prepare them, how to buy and store - just great all around information. Anyone can get years of use for family dinners and entertaining - it may even replace the Moosewood! Full Vegans be warned - many recipes contain eggs, cheese, and there are fish recipes.

If you want to eat a much healthier diet (especially if you are a diabetic), beg, borrow or steal this book! The recipes range from easy to complex, with everyone of them fantastic. My wife and I have had Arabian Spinach countless times. For satisfying a finicky eater like me, this book is great. Every recipe is fully explained and photographed. Ingredients are easy to get. You will wow your non-vegetarian friends.

This is one of my favourite books. I have tried a ton of the recipes and have found them all to be to my liking. I've had this book since '98 and have been using it ever since. I haven't tried the desserts yet but plan to make the vegetarian mince-meat tarts and the plum pudding. I live at a very high altitude and don't always feel like making adjustments to dessert recipes which require baking.
I have found that this book contains not only simple recipes that are quick, easy and delicious, but also more complicated and complex recipes as well. The encyclopedic portion explains many factoids about various ingredients and also gives tips on how to find and prepare them. I hadn't known that pulses needed to be boiled for ten minutes then rinsed before cooking until I read this book. The other BIG selling factor for me were the photos; each and every recipe is photographed so the finished product can be seen and most of the dishes have photos of the preparation process. There really is no guess work as to what the dish should turn out like. I would highly recommend trying this one out!

So far the soup recipes I have made have been great! I've cut back on the fat a bit and it still is very flavorful. I love the pumkin soup!!

This book is absolutely amazing. I have been a vegetaraian for 10 years and have never found a book with such great easy-to-do recipes! The beginning of the book explains every vegetable in your supermarket; how to cook, prepare, and even when they are in season. AMAZING book!

This is an excellent book. The presentation is attractive and the suggestions practical. I borrowed it from a friend and have tried unsuccessfully to get my hand on a copy. This is a great book for (Vegetarian) cooks. My sister's favorite part is the part on the vegetables in the front where I go whole hog for the great recipes collected afterwards. Admittedly, some of the ingrediants for the recipes can be hard to get a hold of, but if you value your health or the enviroment (or animals in general) this is a great way to find foods to eat that are every bit as tasty as meat dishes. You'll never miss eating meat again!
