I picked this up at my library and was pleasantly surprised at what it contained. Somuch so that I had to have my very own copy! I know I will be making many items out of this book. I am eating gluten free and this is a helpful addition to my new way of eating.

For decades in the United States, we have been led to believe that all of the health and weight woes people have been suffering with is a direct result of their consumption of one thing--dietary fat. But we are now discovering that assumption was dead wrong as obesity, diabetes, heart disease, cancer and more have all gotten worse. How can this be? Well, you never hear about this in mainstream health reporting, but when they removed the fat from our diet they replaced it with something even more detrimental--carbohydrates!Dr. Keith Berkowitz, one of the leading physicians in America using low-carb diets to help his patients get optimally healthy, says it's American staple foods like white flour and sugar that spike blood sugar and insulin levels that have led us down this path to destroying our health. But the good news is you can still eat amazingly healthy and delicious foods by going flour-free and sugar-free as he outlines in this awesome book! The only thing I was disappointed about in this book is the use of "fat-free milk," "fat-free yogurt," orange juice, bananas, raisins, and other high-carb, low-fat foods in his recipes after he railed against them at the beginning of the book. Unfortunately, this is probably something the "Complete Idiot's Guide" publisher forced Dr. Berkowitz to do which is such a shame. The recipes would do just fine using real heavy cream, full-fat sour cream, and skip the high-carb fruits by using low-glycemic ones like berries instead. While this book attempts to shift the paradigm of healthy eating, in the end it just continues to perpetuate it. |
