Although there have been several good recent cookbooks devoted to specific regions of Spain, such as Marimar Torres's The Catalan Country Kitchen ( LJ 3/15/92), there has been nothing with the scope of this book since Penelope Casas's The Foods and Wines of Spain ( LJ 10/15/82). Passmore, an Australian food writer and author of Asia the Beautiful (Knapp Pr., 1987; CollinsPubsSan Francisco: HarperCollins, 1992. reprint) traveled extensively throughout Spain collecting hundreds of authentic recipes for this ambitious work. Here are the traditional regional dishes, illustrated by more than 80 full-page color photographs. Recipe instructions assume some food knowledge, and some are overly abbreviated, but this remains an impressive undertaking. For most collections. BOMC and Betters Homes & Gardens selections.
