Spring Rayne Paone is a Gluten Free, Vegan, Raw Food Chef. She grew up in Orlando, FL and has been challenged with many allergies and sensitivities from a young age. I've been trying to learn to eat Gluten free but have had a difficult time with it. This book makes it easy and yummy. I saw the author on a morning news show in Phoenix and am so happy I bought her book!

When I got this book and I read every page at one sitting, staying up well past my bed time. (I know, unusual behavior for a cookbook!) That's how good it is. I have other cookbooks for preparing "live" food dishes (under 115 degree heat) but this book is by far the best. Easy to understand recipes and gorgeous photos. Also, you can make these recipes VEGAN - or not, she tells you how to do it both ways. I am not a vegan, and I do eat some meat, but I know I this book will be the one that will sit out on my kitchen counter every day. I am gluten intolerant, and my husband is diabetic, and neither of us eat any sugar, so this book is perfect for us. There are recipes for some fabulous looking desserts too, all made with raw blue agave (low glycemic) and quinoa flour, so I'm pretty sure I'm gonna have to make some of these too, even tho there is some sweet in them. The only grain my husband and I eat is quinoa, and there's plenty of recipes for this super-food. We are also big on smoothies. I have been sort of in a rut making the same ones. Not any more, there are many smoothie recipes. The one called "Orange Serbert" is wonderful, and made without any oranges! I highly recommend this book!
