I personally hate this book. I have only read the first two chapters, but have already found several mistakes. Page 70 provides a definition of "energy dense" foods that contradicts the definition given on page 39. The ABCDEs of Nutritional Assessment are EACH repeated about 6 times between pages 42-47. It is all very, very, very repetitive but that is the worst example so far. The book could easily be a third to a fourth of the massive 700 pages and still impart the same information. There are unnecessary graphs and pictures galore, just in case you don't know what a salad, a glass of milk or coke, or a Cheerios box look like. It looks to me like it was intended for Junior High School level students rather than college. It contains outdated information, but I see that there is now a newer version, for $160 on Amazon. Outrageous price for a text book IMHO.

Update: I am now in chapter 4. It states that honey and sugar have essentially the same value, and dismisses honey in a paragraph. It says nothing about the vitamins and minerals in honey not found in sucrose, the different affect they have on the glycemic load, or the medicinal purposes and usefulness of honey especially in dealing with allergeries. It down plays the complaints associated with artificial sweetners. It is like one big infomercial for "The Man" including the FDA. We are getting our indoctrination. It suggests multiple servings of dairy per day without addressing whether this suggestion makes sense given the high fat and cholesterol content. It states that the FDA is confident that the GMO (genetically modified organism) varieties of crops approved are safe to consume. Without saying that no long term independent studies have been required before GMOs are approved by the FDA and we have reason to be afraid. The FDA has depended upon Monsanto and similar companies to test their own GMOs. A Canadian study shows that Bt and other toxins from these GMOs fed to livestock, were found in the blood stream of those who ate meat, eggs or milk. The Bt toxin survived the human gut and entered the blood stream and passed through the placenta into unborn children as well. But you would have no clue of that from reading this book.

When I got the book for my class it was slightly more used than what it said it was. I was a little disappointed when I recieved it but I paid 80 bucks for it which was still cheaper than what it was from my bookstore at the school. But I was still disappointed in the quality because it said Like new.
