This is the second cookbook I have purchased thru Amazon and I am very delighted wtih the purchase. As a vegetarian and one who relies heavily on gluten or seitan products this is a valueable addition to my kitchen library. I recommend this book highly to anyone NOT gluten intolerant.
Be aware that seitan use can be nearly habit forming since it is so very easy and flavorful, even many of your meat eating family and friends won't miss the mouthfeel or flavor of meat with the use of these great recipes.
