A working mom favorite.,

This review is from: Cooking Light Cook's Essential Recipe Collection: Weeknight: 57 essential recipes to eat smart, be fit, live well (the Cooking Light.cook's ESSENTIAL RECIPE COLLECTION) (Hardcover)
I am a working mom and eating well is very hard to do when you have to please the palates of a trucker husband and an 18 month old too. I have made about 50% of the recipes in the book since I have bought it and I have not found one we didnt like yet. They are fast and not short on flavor.

My favorite cookbook yet!,

I have a million cookbooks, and am a food network addict. This is by far the best cookbook. It has pics to go with every recipe as well. There aren't a huge amount of recipes, but what they have is all delicious. I don't think theyre extremely FAST to make though. Some still have a lot of prep work. But that's fine for me.... I make some of these recipes when I have company and it's always a huge hit! I definitely think everyone should own this cookbook!

This is one of my favorite books that I have actually used. I have many other cooking books that I have not really used. I scan through them and never really followed a recipe. This book is great. Lots of healthy recipes inside and it has a little bit of everything as far as fish, beef, chicken, etc. What is great about the book too is the nutrition information. Every recipe has its own picture so you know how your dish is supposed to come out. There are also lots of tips and ideas on making and preparing dishes faster and easier. Great book!

This book is divided into 6 sections: Essential Weeknight, Make Ahead, Fish & Shellfish, Meats, Poultry, Pizza & Sandwiches.
Of the 57 total recipes, 10 of those are for pork, which my boyfriend and I don't eat. Otherwise, I've made several of the recipes and they have all turned out great. Many lend themselves easily to tweaks and alterations. They're all easy and there are no exotic ingredients. Every recipe has a picture (which is great!) and there is a back section which contains side dish recipes. Aside from the pork, this is a great cookbook.

When you buy a cookbook, you never know what you're going to get. Too often I've picked one up at the local bookstore, only to get it home and realize that it requires me to go to a specialty market for the ingredients. This one is no such book! It has some delicious and fast recipes with easy to obtain ingredients (ones that I often already have). Heck, the recipes are so easy that even my husband can cook them! (Not that men can't cook. He just can't cook.)

I have yet to try a recipe from this cookbook that has not been requested by my family to be used again.

This book has lots of great recipes that are fairly easy to make. Each recipe gives serving ideas as well as what side items can be paired with each dish. The only con for this book is that many of the recipes call for somewhat exotic ingredients (orzo, ground ginger, chipotle chile, fresh rosemary, etc.) that most people wouldn't already have in the house. If you don't mind the extra trip to the grocery store, then this is a great tool.

I've had this book for about 7 months and so far, I've made 29 recipes, all but three were excellent. Even the three that weren't great get extra points for being quick. My top 5 are: Sweet Orange Salmon, Shrimp with Feta, Cumin Crusted Pork Soft Tacos, One Dish Rosemary Chicken and White Beans, Spaghetti with Meat Sauce. This book proves that even with a busy schedule, you can still eat healthy and tasty meals.

This little book is packed full of recipes with full page photos that are simple to make and the ones I've tried so far are delicious. If your looking for quick healthy weeknight meal options this is a great cookbook to buy. I'm planning to try at least 75% of the recipes in it since they look/sound so good. I also love that there is a picture of each recipe in the book.
