Editorial Reviews

Review

"The home cook hungry for the fresh, healthy, and real needs this book. This isn't light-means-less cooking. It's exciting, bold food from the best healthy test kitchen in the country."—Rick Bayless, chef/owner of Frontera Grill, winner of Bravo's Top Chef Masters

"Cooking Light proves that the new idea of healthy eating has nothing to do with compromises at all. This is the future of good cooking. At the end of the day, it's about flavor!"—Ming Tsai, chef/owner of Blue Giner, Emmy Award-winning host of Simply Ming

"Electrifying. Hunger-inducing. Smart. These aren't words normally associated with healthy cooking, but the editors of Cooking Light have put together a handsome, forward-thinking cookbook that's good for you and for the planet."

Steven Raichlen, auhtor of The Barbecue Bible

This books starts with the principles of eating lighter--embracing the healthy fats (avocado, olive) over butter and cream and cheese. And the recommendation to eat more vegetables and less meat and making full use of hearty grains. I embraced this general principle earlier this year by reading a number of other books, and lo, it works!-- allowed me to take off 25 lbs this summer with no pain at all. I was a happy camper. Now, I am a thinner camper, too.

At the same time, the recipes make sure there is enough flavor, texture, color and mouth-feel to satisfy the soul--for example, the avocado corn chowder recipe. I love avocados and am always looking for ways to use them other than scoop-and-eat, and I love corn chowder, one of my "party" recipes. However, I don't need the cream and butter. This recipe has all the great creaminess and is a lot more interesting, too.

There are even bread recipes, like wheat berry bread. I prefer home-baked bread (as I eat LESS of it; one slice seems to satisfy of whole grain bread over multiple slices of floppy commercial white bread.)

They even have a Boston Cream Pie recipe, which was our traditional birthday cake. No need for the heavy ganache I used to use for the chcolate icing; this has low fat milk and is a lot lighter yet looks as decadent as my usual method. (French genoise cake with eggs and butter, creme patisserie for the filling.) Way lighter than mine.

Condiments like mayo and pickles are also included--now, that is not usual in a cookbook but condiments can add on unwanted fat and calories, so including recipes to lighten these up is not a bad idea.

Note: the Kindle Edition is for the COLOR Kindles like HD and Fire only--my Kindle Next Gen Keyboard edition could not accept this book.

I have several hundred cookbooks and used to receive the Cooking Light magazine. I've been taking culinary recreational classes for about 3 years and know a little about cooking. This book is a perfect gift for 2012. The book describes the important features of cooking healthy. The recipes are very relevant to our modern eating habits. Most importantly, the book shows a picture of the finished recipe which, to me, is a must! This is a keeper for under the tree or any present in 2013.

Please note that this is my review specifically for the Kindle version. If updates or changes are made to this version, I will gladly update my review accordingly.

That said... The recipes are wonderful. They are simple, the ingredients really aren't that out of the ordinary or hard to come by, and they are delicious. It is very true to the Cooking Light publication's style, content and philosophy overall. I give the content itself 5 stars.

However, I am incredibly disappointed in myself for buying the Kindle version instead of the actual book version. I have an iPad mini (and if I am not utilizing my Kindle app correctly, I am open to correction and will adjust my review) and I take it everywhere with me. So I had visions of displaying the cookbook on my counter, music playing in the background, and enjoying the whole cooking experience. For whatever reason, with this version of the "book", you have absolutely no benefits of the Kindle features, other than just being able to read. You cannot bookmark pages, you cannot search for key words (or in this case recipes), the links in the Table of Contents are not links at all, you can't take notes, highlight, or look up words/ingredients, and you cannot flip between vertical and landscape orientation (handy if you want to view a multiple page recipe side-by-side, which in this case you can't do). You quite literally have to "flip" page by page to get anywhere, OR you have to memorize (or in my case write down) the location number of what you're looking for in order to access it quickly. To be honest, as of today, I still haven't even seen every recipe that is in there, because it takes forever to get through the entire thing. You'd think, at the very least, you would be able to quickly navigate from the Table of Contents page.

This book is as good as the magazines! I have made my entire menu from recipes from this book! They have really good desserts, nice pictures, and the best part is most of them have already on hand spices, nothing too crazy. If you are looking to cut down on fat and still have tasty meals, this book is for you!

Many interesting recipes.
I like that they use real ingredients rather than no fat sour cream ,sugar free products etc.
Recipes include Nutritional information. Only complaint is that the definition of. "Serving" seems quite small.

Over the past year, I've been doing a lot more cooking and looking up recipes online. While that works when you're looking for a specific recipe, I find having a cookbook to thumb through gives me ideas and new things to try. I love this cookbook - it has many recipes I can't wait to try and a lot of good tips about cooking healthier meals. Nothing I saw seems too difficult and I didn't see the need for special equipment. I've made a few recipes so far and they've turned out excellent.
