About the Author

VESANTO MELINA is a dietitian, university and college teacher and government consultant. For the past fifteen years, her speciality has been vegetarian nutrition and foods. Her professional achievements include the prestigious Clintec Award of Excellence for leadership in dietetics. She is the co-author of Becoming Vegetarian JOSEPH FOREST is a chef and food consultant based in Vancouver. His professional career has included working as a banquet chef for the Four Seasons Hotel and other fine dining establishments. He and Vesanto Melina have collaborated on a series of vegetarian cooking and nutrition classes which attained national recognition in Canada.

Vesanto Melina, M. Sc., R.D., was trained at the University of Toronto and the University of London, England, and taught nutrition at the University of British Columbia in Vancouver and Seattle's Bastyr University. She was a coordinator for the vegetarian section of the Manual of Clinical Dietetics(Dietitians of Canada and the American Dietetics Association) and is co-author of the nutrition classic "Becoming Vegetarian" (now in eleven countries and three languages), as well as "Cooking Vegetarian', "Becoming Vegan" and "Healthy Eating for Life to Prevent and Treat Cancer". Vesanto is widely known in the media - press, TV and radio. She is an internationally known speaker and has presented workshops on the topic of vegetarian nutrition to over 1800 dietitians throughout. North America. Vesanto received the prestigious Clintec award for leadership in dietetics. She regularly consults for government and industry and for individual clients.To complement her scientific expertise is Vesanto's joy in creating food that is healthy, delicious and simple to prepare.She became a committed, ethical vegetarian 13 years ago when she was moved to explore the consequences of food choices beyond personal health. Brenda completed an honors degree in Human Nutrition at the University of Guelph, followed by an internship in Ottawa Ontario. She has worked as a public health nutritionist, clinical nutrition specialist, nutrition consultant, academic nutrition instructor, and is currently the Past-Chair of the Vegetarian Nutrition Dietetic Practice Group of the American Dietetic Association.

Of the many vegetarian recipes books I own, this is the one I return to the most. The recipes are delicious, turn out well consistently and have ingredients that I would normally have on hand. The nutritional information is listed with every recipe, which makes it easy to see at a glance, and the opening chapters are very informative about healthy eating. The recipes include enough spices to give them wonderful flavour without being too hot. A practical and inspiring book.

Cooking Vegetarian by Vesanto Melina, R.D. and Joseph Forest is a very welcome addition to the top ten list of cookbooks every family, omnivore or vegetarian, should own. Easy to read and attractively designed, this specially bound paperback lies flat for ease of use when cooking.

The book includes a 20 page section called Healthy, Delicious and Easy, a healthful nutrition primer that provides up-to-date information of use to everyone. There are over 150 recipes, half of them low fat and heart healthy (there's a separate list of these with the percentage of calories from fat and fat grams given). Although some of the recipes are time-honored classics, many are imaginative, creative and simple to prepare. A section of attractive color photographs includes step-by-step illustrations for making sushi.

Cooking Vegetarian is a low-key, easy-going introduction to vegetarian cooking to go along with Melina's earlier classic, Becoming Vegetarian. It extols the pleasures of food and the joys of healthful living without upsetting those who choose to eat other ways and yet it may well serve as a eye-opening and non-threatening initiation to a healthier lifestyle.
