Not written for the food historian but the average reader this book is filled with modernized recipes that one can make at home with little trouble. But it's saving grace is that the authors include many of the original recipes or at least references to them or interesting side bars which are far more interesting, at least to me, than the updated recipes. Nice beginner book for someone interested in early American cooking.
