Such a price for a double boiler?,

I grew up with a mother who baked pies. Cream pies were my personal favorite, plain and coconut cream. My mother made them from scratch and from my early youth I would stand at the stove on a chair stirring the cream custard in a double boiler, waiting anxiously for it to thicken. It seemed interminable then, in what I recall to have been a metal pot with an insert. In our marriage we have carried on the tradition and have had many different double boilers over the years, including aluminum and glass ones which we had up until the purchase of an induction range which precluded the use of glass. We have had All-Clad Ltd cookware almost since it was introduced, but it too had to be replaced, being mostly aluminum and not compatible with induction technology. We chose the All-Clad Copper Core induction compatible, and the double boiler seemed an extravagant, somewhat over the top purchase.
Now, I have been stirring custards for pies and ice creams for fully sixty years in double boilers, and having tried occasionally to do it without one, on the stove directly, I would do it no other way. This double boiler with the porcelain insert is the best one I have ever used, hands down. I was a bit incredulous at first, but find it does the job both quickly and uniformly and without complications, providing a smooth custard every time. One must be cautious not to over fill the bottom pot to avoid splatter. The insert also does not seem to fit the nearly same size sauce pan, which is too snug a fit. As with all of the All-Clad line the workmanship is impeccable and flawless. Is it worth the price? All my other pots and pans are already passed on to the second generation and still as good as new. With a little care, these items may well last forever. This set will undoubtedly outlast me. The food prepared will only fail if the cook does. I highly recommend this product. |
