I had wanted to track down the book based on the Cornell U experiment in improving the nutrition of bread. I was surprised, though, that the "book" was really more of a pamphlet. It did contain the info I wanted, but don't expect a book.

I've had The Cornell Bread Book for years, bought it from Dover back when it was $4.00, and that is $4.00 I've never regretted spending. It's not a hardcover book as some expect, but what on earth does that matter? My copy looks as if it's been through the wars after many years of reference in the kitchen but I'm still using it. The recipes were developed by Dr. Clive McCay, a professor of Nutrition at Cornell, who believed that health and diet were linked. Mrs. McCay saw to it that thorough instructions on how to make bread were included if you've never done it, and the payoff is the best bread you've ever eaten. More, it's probably the best for you, including ingredients like honey, sea-salt, full fat soy flour, non-fat dry milk and wheat germ. The sourdough bread is out of this world and the rye bread with beer is wonderfully rich and good. Even at these inflated prices, you can't do better than invest in The Cornell Bread book if you want to know what real, homemade bread should taste like.
