A welcome change from yellow cornmeal.,

We are using this blue cornmeal for cornbread and it is very delicious. It has kind of a nutty taste and a more substantial texture than yellow or white cornmeal-based cornbread. After eating the standard cornbread for years we are delighted with the change. We now alternate between them for variety. Since we ordered 10 pounds, as soon as the blue cornmeal arrived we put it in a plastic bag and stored it in the freezer.
