While the chutneys and relishes may have intrest to those looking for new tastes, the information on supplies and how to process the finished product do leave something to be desired. The USDA does not approve of the processing procedures or reuse of jar lids as suggested in the book. And I found the quick pickle recipes lacking in enough vinegar to make them safe. If you have contact with your local extension office then by all means call them and work with them to make these preserves. With a little adaptation and proper processing these can be made safely and with wonderful results.
