From the Author
Cowboy Food is an eight year effort of passion. Most of the recipes contained in this art heavy book were passed down by my family. They are from Americas frontier communities and trails. I have been a heart patient for years and bent the ears of my Doctors for hours on end trying to make these recipes as healthy as possible. Mission accomplished. My book is endorsed by a UCLA physician. Cowboy Food is not just about various types of chili either, it includes chapters of healthy snacks, sides, salsas and more.
A primary goal was not just to make the meals "healthy" but to conserve the original taste where possible. Many hours went into testing various combinations to retain the original bold flavors.
To make this creation fun to read, I have created zany characters who interact throughout the book. The primary character, Pappy Jack, travels from East to West looking for gold in the fields of California. Along the way he gets into hilarious situations with the likes of Wyatt Earp, Doc Holiday, Bat Masterson the Donner Party and others.
Our now internationally famous American bowl of chili was originally created as a stew along the trails to California and as it turns out, it is one of the healthiest meals you can have. In this book, it is an adventure too.
