In addition to being allergic to dairy, I also have to avoid wheat (and corn and soy). So the closest thing I've had to a dessert in years is sorbet, and even then I feel guilty about all the white sugar.

I chose this vegan ice cream book, because it had the best reviews of the ones I was considering. So far, I've only made the vanilla ice cream for a birthday party and everyone thought it tasted like coconut ice cream. The people that like coconut thought it was great, but for myself and a few others, we were not as impressed. It was definitely creamy though, but it...

In addition to being allergic to dairy, I also have to avoid wheat (and corn and soy). So the closest thing I've had to a dessert in years is sorbet, and even then I feel guilty about all the white sugar.

I've made two of Cathe Olson's ice cream recipes so far: coconut, by hand (before I had an ice cream maker, and it really wasn't very hard to do) and chocolate...both fabulous. Not only am I not allergic to them, I don't even have to feel guilty. Just a little agave as a sweetener, all natural, full of food value...it's like a pleasant dream I would have.

(Note: I love coconut milk, but thought it would change the experience of chocolate ice cream. Not so much. It just tasted like chocolate...very rich and creamy...and I was not aware of a coconut base.)

I've been using almond milk instead of soy and it works wonderfully, I highly recommend this book for anybody who wants to get away from dairy...and I think many people might be happier and healthier (and less stuffy) if they tried it.

The person who gave this book a bad review is not up on the latest research on coconut products. Coconut is anti-carcinogenic, anti-microbial, anti-bacterial, and anti-viral. The main saturated fat that it contains, lauric acid, is also found in mother's milk and has been shown to promote brain development and bone health. Coconut fat has medium chain triglycerides which burn fat instead of storing it. The recipes in this book are delicious and healthy. I just made the cherry-vanilla ice cream using fresh cherries and it was awesome!

These recipes are so easy to make and taste great! So far I've made the blueberry frozen yogurt, the strawberry ice cream and the mango yogurt pops. I can't wait to try more! The healthy ingredients make it even more wonderful!

Wow. This book makes it so any body on any diet can have ice cream.

Use Dairy, no problem
Vegan, no problem
Gluten free, no problem
Raw food, no problem,

I have two other ice cream books and they are a lot of work. This is my favorite, I do not even get the others out now, there is no need. This book is loaned out all the time I'm so excited about it. The recipes use food not syrups for flavor. I made blueberrie and peach ice cream. 3 cups fruit and the base of either, soy, coconut, dairy, almond, rice, you choose. NO EGGS! NO SATURATED FAT! It's food, it's healthy, not guilt. Well, their is a coffee ice cream, so, you can have some guilt if you desire, I did desire with dark chocolate slivered on top.

I am a fan who owns all of Cathe Olson's cookbooks. I am impressed by her knowledge and expertise on healthy eating. We attended a demo she did locally after "Lick It!" came out and the flavors we sampled - blueberry and strawberry - were the richest fruit ice creams I have ever eaten. Creamy and tasty. We ran out and bought an ice cream maker so we could make some of the ice creams in the book.

So far, we have tried plain vanilla and chocolate chip cookie dough. It has been somewhat tricky to get the freezer time and consistency right (not too soft, not too hard), but everyone has really liked the results. My husband is not a fan of coconut, but he LOVES the recipes in this book (which are vegan and use coconut milk). Everyone in the family, including my notoriously picky 4 year-old, enjoys making and eating the ice creams.

Seriously, I would trust anything Cathe Olson produced. The biggest problem we have now is limiting our ice cream consumption...or maybe we'll just get another ice cream maker to handle the loads!

I'm thrilled to be able to eat all the flavors I've missed since giving up dairy products: Rum Raisin, Mint Chip, Mocha -- and my favorite Peppermint Stick. We've had fun making ice cream pies and bombes as well -- they'll be great to take to barbecues and potlucks this summer -- and of course when we have company. The Chocolate-Coconut Torte is amazing and so is the Fruit and Granola Bombe. Another thing I appreciate about this book is that almost all of the recipe can be made soy-free. I plan to use this book a lot.

This book provides great alternatives to dairy-based ice creams. The recipes result in flavorful, creamy, delicious ice creams! My favorite so far is the Mexican Chocolate (though I did have to add a dash of cayenne.) I normally don't like chocolate ice cream but this recipe blew my socks off. The texture was even better than traditional dairy-based ice creams...yum!!!

If you like ice cream but need to limit your dairy intake, this is the book for you. But it!

I've tried the lavendar, strawberry, and blueberry, and thought they all had a great, creamy texture and wonderful taste. It's amazing how delicious and easy to make these recipes are. My kids can't wait to make the chocolate-rasperry ice cream, truffles, ice cream pie, and many of the other ice cream flavors and creamy treats.

My 6 year old daughter has a number of crazy food allergies. I had been buying coconut milk ice cream occasionally when we could make the 40 mile trek to the nearest Whole Foods. Each container was $6 and didn't make it through an entire week. Now I can make a batch of ice cream (I usually make a double batch) and it lasts several weeks. The best part is that I can create custom flavors using Cathe Olsons's basic recipe and my daughter LOVES every flavor we've tried. She says it's better than the kind we used to buy at the store, and I agree! It is rich and creamy and SO EASY!!! I've made homemade ice cream before (the dairy kind) and it was never as painless as these recipes. Very few ingredients are needed and the coconut milk is easy to find in the asian section of most groceries. I've found that using vanilla flavored almond milk paired with the coconut milk tames the coconut flavor a bit. One of the BEST cookbooks I've found for vegans or allergic people!

This book is wonderfully illustrated and written, with many delicious recipes. The main ingredients for the ice creams are Soymilk and Coconut milk, so make sure you don't mind a bit of coconut flavour!

The book not only includes ice creams, but also sorbets, cakes, cones, bars, shakes, sauces and more. Wonderful ideas and many tasty treats. Highly recommended.
