Editorial Reviews

From Publishers Weekly

Most readers won't need to be convinced that sweet crepes, waffles and pancakes are delicious for breakfast or dessert, but this collection of recipes also makes a compelling argument for savory versions of these batter-based delights. The book begins with a brief history of pancakes around the world, and continues with an overview of the basics (add extra eggs and melted butter to pancake batter to make crepes, and a rising agent to make waffles), including variations on the main ingredients—flour, a liquid (usually milk), eggs—and how readers can change the taste by varying the type of flour (e.g., buckwheat, chickpea, gluten–free, etc.). Divided into breakfast, main meals (which encompass lunches and dinners), desserts, snacks and accompaniments, the recipes range from hearty (Breakfast Waffle Sandwich) to sweet (Oatmeal Pancakes with Raspberries) and salty sweet (Deep-Pan Bacon and Apple Pancakes). Hawkins, a cookbook author from Scotland, also offers such unusual fare as Chicken and Mushroom Pancake "Pasta" (where the pancakes, which are made from buckwheat batter, are sliced into thin strips). The pages are suitably glossy, and most of the recipes are accompanied with a nice photo of the finished product.

Seems to have some good base recipes although I haven't personally tested them.

I saw a pre-release for this book sometime ago, and quickly put in an advance order for it with Amazon. The thought of a whole book given to pancakes and waffles seemed like a lot of fun to me.

Honestly, when it came and I opened up the box, I was a little disappointed. I was expecting a hardback with good binding. Instead, this was a paperback with a white comb binding. However, my disappointment quickly dissolved as I began looking through the book. The pages are suitably glossy, and most of the recipes are accompanied with a nice photo of the finished product.

Most important, however, was the variety of the recipes. An easy hour with this book and I already knew more about the world of pancakes than I had gained by cooking and flipping them for 30 years. Traditional recipes are provided. But there is also ample coverage of pancakes with non-traditional flours, such as chickpea. The savory recipes almost balance out the sweet ones, providing a lot of opportunities to make these for lunch or at meals when one wants something other than a pile of fluffy sweets.

I really enjoy this book and do not regret pre-ordering it one bit. The variety and instruction provided is truly eye-opening.

As a chef who has always believed pancakes could be more than a sticky stack of syrup- drenched paste on a plate, it is refreshing to enjoy Crepes, Waffles & Pancakes. Well conceived and filled with lush photographs, the book expands the bounds of the category, giving us delights like the Deep-Pan Pancake, a cross between a pancake and a pizza, shrimp-filled Jambalaya Pancakes, a Prawn and Mango Pancake Basket (using pancake batter to share an edible basket), and over 100 others.

The waffles section moves ambitiously into the realm of ther main course: Spicy Lamb and Chickpea Waffles, Poppy Seed Waffles with Ratatouille, Spicy Tomato Waffles with Pork. Specialties like south Indian Dosas with spicy potato sauce, Blintzes, and the wonderfulclassic Cherry Clafoutis round out this excellent kitchen resource.

My favorite meal of the day is breakfast. And I'll trade eggs and bacon for waffles, pancakes or crepes any day of the week. They are true 'comfort' foods. If you want variety in your breakfast (or even a late-night supper or dessert) Crepes, Waffles & Pancakes fills the bill with over 100 mouth-watering recipes.

For the new cook, as well as the experienced cook, Crepes, Waffles & Pancakes includes sections on ingredients that will make the food better, and the equipment that contributes to the ease of cooking. It's worth reading.

Some of my favorite recipes are: Lemon and sultana buttermilk pancakes; the tasty Deep-Pan pancake; Jambalaya Pancakes; Russian Blinis; Almond Waffles with Cherry Compote' and Coffee Crepes with Caramel Oranges.

Whether you are eating breakfast, having guests for brunch, snacks, dinner or dessert, Crepes, Waffles & Pancakes has something special for you to serve.

Armchair Interviews says: A cookbook to keep and use for all occasions.

I just received it after my Christmas vacation, have not try the recipe yet. Most recipes came will a nice picture so that you will have an idea how it looks like but not all recipes came with pictures, almost every 2-4 recipes then there will b 2 pages with no picture. This book cover will different ideas to make pancakes, waffles and crepes. I have brought a waffle maker and a crepes maker from Amazon so I am going to try some recipes on both. The price of this book is cheap but the quality of the paper and the printing is in good standard. I would recommend to anyone likes making both 3 of these should get these book.

I don't know what the "not enough recipes" is about...There are quite a good amount especially for the price. My complaint is only in the organization- the recipe categorization doesn't flow right and things don't seem to be in the right category. However the photos are excellent-something that works far better than some where you get a verbal description-which if it's a new thing you wish to try you don't know if you want to try it or if you got it right. I haven't tried the recipes yet-however-they read correctly-I hate when people rate about how something wasn't 100% correct-people have different taste experiences and palettes and different methods...you can always adjust stuff..
