5.0 out of 5 stars not just for soup!, February 10, 2002

This review is from: Le Creuset 2-3/4-Quart Soup Pot, Blue (Kitchen)
This is one of Le Creuset's more affordable cooking pots, and it makes for a great introduction to an amazing product line. The pot responds excellently to a low or middle flame. Cranking up a high flame under it lessens its trademark conductivity, and will lead to unsuccessful attempts at more complicated soups. The best part about this pot is that it can be used for Indian and Thai curries that call for long simmering periods. Scorch oils, onions, spices etc. in a Calphalon or All Clad frying pan on high heat. Then transfer the ingredients to the Le Creuset pot, add the remaining ingredients such as meats, coconut milk, cream, or vegetables and you will preserve delicate, sometimes tempermental flavors that need to be simmered in a precisely controlled environment which the Le Creuset soup pot wonderfully provides. Cream, butter, and milk in soups and curries will also be less prone to separating(breaking) with this fantastic soup pot.Give it a try!

5.0 out of 5 stars It's called a soup pot for a reason..., September 16, 2005
I love this soup pot. I own virtually every Le Creuset item made since the sixties, plus a few pieces handed down to me. And an excellent soup pot it is. I also recommend their new Doufeu which I own and love. Best meat cooker I have ever owned.

The difference between this and the various Le Creuset dutch ovens is the curved shape which allows soup stocks and broths to simmer slow and not have any meat or vegetables settle into straight sides. This can be tricky for the serious cook, because food that cannot be stirred completely can settle and overcook leaving an off taste. The size is also nice for two to six healthy servings of a hearty soup or stew.

And the cost isn't that high when one considers the near one hundred year guarantee Le Creuset offers on its products. And its called a soup pot not a casserole. So one can simmer on a low flame any soup, with the heavy cast iron core holding the heat at a steady temperature which is what produces the best soups.

5.0 out of 5 stars Creuset Casseroles are the Best, May 8, 2000

The single best pots for doing rich chicken dishes and the like. Conducts heat perfectly, well-balanced and very easly to clean. So many great meals have emerged from these pots that I tend to cook more frequently, especially the more slow-cooking or complex dishes.

I inheirited one of these pots and then bought another. Since then I have excused all similar imitations from the kitchen.

If I had to equipt my kitchen with 3 cooking pots/pans, this would come right after the skillet and sauce pan.

5.0 out of 5 stars Chicken soup with rice, March 7, 2003
This review is from: Le Creuset 2-3/4-Quart Soup Pot, Blue (Kitchen)
Like all le Creuset pots, this soup pot has awesome heat retention and a heavy lid, making it excellent for cooking rice, slow-braising meats, or gently simmering heavy sauces. Like the other le Creuset wok-shaped pots (the 4.5 qt soup and the 7.5 qt boullibase), this pot is excellent for carmelizing onions and peppers at the beginning of a recipe, reduces liquids quickly, and for thin soups is almost self-stirring.

The first drawback to this pot is its small size. The useful volume is about the same as that half-gallon container in your fridge. (OK to make lunch for two or rice for five, but way too small for a casserole). The second drawback is its enamel coating. I usually rave about the le Creuset enamel, because it soaks clean without scrubbing, and because - unlike stainless - it's totally non-reactive. But with a pot this size and shape it would be nice to be able to wisk a sauce with a wire wisk, without worrying about scratching, or to use the pot for deep-frying, without worrying about destroying the enamel.

I still use (and adore) the pot, but if you're only buying one le Creuset to test out the line, buy the 4.5 quart soup pot, not this smaller version. And if you're looking for a truly all-purpose small soup pot, consider the Kitchenaid 2.5 quart saucier instead.

5.0 out of 5 stars Perfect for whisking creamy sauces, June 5, 2001
By

This review is from: Le Creuset 2-3/4-Quart Soup Pot, Blue (Kitchen)
This small pot is perfect for cream based soups or sauces. The bottom is shaped as a wide rounded bowl and is very suitable for whisking. Milk or cream base thickened with flour will not overheat or burn in this cast iron pot. I even use it for heating chocolate and whisking in the egg, it's that good in keeping temperature moderate and even. I also use it to serve casserole or side dishes at the table since French blue coordinates perfectly with my Denby Reflex dinnerware pattern. I don't use it for soups because it's too small for my family. The larger version of this pot is a 7 1/5-Quart bouillabaisse pot. Some of the dishes that come out perfect: peach cobbler, bread pudding, chicken pot pie, bread stuffing for turkey, premium ice cream where recipe calls for heating of the incredients prior to freezing it in an ice maker, and many many others.

5.0 out of 5 stars Does not require small (gas) burner, January 30, 2002

This review is from: Le Creuset 2-3/4-Quart Soup Pot, Blue (Kitchen)
Like others we think this pot works beautifully for slow heating of many things. Although the flat bottom is only 4 inches, the sides curve up gradually, and a normal 4-inch gas burner, with circle of flame out to 4 1/2 to 5 inches works quite well at least at medium and low settings. A small burner (which we don't have) is not required. On an electric stove things might be different.

Amazon Verified Purchase(What's this?)
This review is from: Le Creuset 2-3/4-Quart Soup Pot, Blue (Kitchen)
This is a great pot, and I love the flavor that one gets from mixing the ingredients and spices in a low- to medium-heat cooking session. And this really retains the heat for a while, so it seems that the flavors just get better and better (as is the case with most broths).

It's also a lovely size for a soup pot for a couple or a small family; you don't feel wasteful heating a big stockpot.

Le Creuset is [spendy], but the prices are very good at Amazon and the durability of the enamel-coated cast iron is amazing.

5.0 out of 5 stars The Love of my Kitchen, September 17, 2003
By A Customer
This is the best thing I ever had in my kitchen. Although it is relatively costly, every penny is worth paying for this beautiful cast iron pot. It is the cook's best friend, second to none. One of the things I love in Le Crueset products is that you could use it from the freezer to oven, then straight to the dining table where you could proudly show it off to your guests due to its elegantly classic design.

5.0 out of 5 stars Perfect Pot, February 4, 2002
By A Customer
This review is from: Le Creuset 2-3/4-Quart Soup Pot, Blue (Kitchen)
I just purchased this yesterday in bleu and made Emeril's Shrimp and Suasage Jambalaya tonight to break it in! The pot was just the right size for the recipe. Everything cooked evenly, dinner was served and stayed warm on the table in the same attractive pot in which it was cooked in. Clean up? Too easy - with a dishcloth and warm, soapy water. The solid weight of the pot did not bother me at all either, FYI. I look forward to adding new items of Le Creuset's products to our kitchen.
