Ever wonder why French women are in such good shape? It's from years of lifting and carrying hefty pans--such as this Le Creuset deep sauté pan--from the kitchen to the dining room table. Although not designed for the slight-of-hand, this pan is otherwise thoughtfully constructed. Enameled cast iron absorbs, retains, and redistributes heat quickly, especially at low settings. The nonreactive cooking surface does not absorb flavors, and the tight-fitting lid locks in flavor, nutrients, and moisture. And, in keeping with French tradition, the pan is stylish and comes in a variety of colors. To prolong the life of this pan, avoid using metal implements on the enamel, heat it up gradually, and cool it down before washing. Dishwasher-safe.
