You don't need high heat to cook eggs, as you don't want to oxidize the protein. Cast-iron provides nice even distribution of heat. Also, cooking with high heat with non-stick cookware is not recommended. Cooking at too high of a temp can cause the coating to come off into your food, and teflon is definitely toxic if ingested.

Although Le Creuset replaced my original pan, the problem persists.....the non-stick coating peels off! This is one of the best pans I have ever owned besides the little coating issue! I followed all recommendations regarding heat source, cleaning, utensil type used, etc. & the coating still peeled off. If you are going to spend the money for Le Creuset products,...

EDIT... after months of use the coating has started to peel on the edges. It looks to be just a sprayed on coating and doesn't seem to be a proper match for a long lasting material like cast iron. Great pan, just wish it was holding up to daily use better.

If you are going to spend the money for Le Creuset products, skip the ones that have a non-stick coating & 'stick' with the traditional products.

This cookware gets a 5 star rating as far as I am concerned. To cook with this cookware is a dream, mostly because it cooks so evenly and the foods prepared turn out great. It is heavy but that is why I like it. I have had some pieces over 20 years and it still works great. The non-stick pieces are extremely easy to cook with and cleanup is a breeze. If you like cast iron cooking, you will love this cookware. The enamel coating makes it attractive and no more seasoning your pans everytime you use them. Try it! Well, worth the price.

I love this little pan. It's beautiful to look at &, like all my huge collection of Le Creuset, it's joy to use. It's the absolute perfect pan for cooking eggs. I've been using this omelet pan regularly for 3 years & it still looks & performs like new. I feel it was one of my best cookware purchases ever.

Keep in mind, you must use proper care with Le Creuset & with nonstick surfaces. Low to moderate heat only & no abrasive cleansers.

I have one of these in an old, discontinued, color (brown)...I got a bargain and so is this one.
You just can't beat Le Creuset for quality, value and usabilty. I use this pan constantly and I wish that it was "granite" in color.
I have purchased the 4.5 qt. round and the 6.75 qt. oval and they are irreplacable in my kitchen.

We give dis one 5 mojo*z!!!

My husband got this pan for me as a gift, and I love it! Besides just being pretty, it cooks eggs beautifully. It really is non-stick--the eggs just slide right out. The pan is heavy, but heavy pans distribute the heat best, so the weight is worth the result.

Omelets are a breeze with this pan - saute' your veggies, add the eggs and let it sit. I am somewhat impatient, so I use a lid from another pan to speed the cook time. Omelet slides out perfectly every time, and never sticks. Yes, the handle gets hot - use a mitt.

I don't ever use my pan over about setting 4 on the electric stove. I've had no problems with the non-stick finish, but I never use metal utensils. All it takes to clean the pan is some hot water & a paper towel.

I have been using my blue omlette pan for two years. The coating is as good today as it was new. You MUST understand that if you sear or burn food at high temperatures in any nonstick pan, it ruins the coating! You also must NEVER use metal utensils. If you buy these pans, use the Le Creuset utensils. They are well worth the money.

The handles DO get warm. Just use a handle mitt! It's not rocket science, people!

This pan makes the best omlettes I have ever cooked. It maintains even heat, it's easy to flip the omlette (I can use this trick to impress my wife). The coating never wears out with proper treatment. Handwash in gentle soap with no abrasives and hand dry and it will last forever.

If you are used to using those ... pans from ..... that you just throw into the diswasher and don't mind letting the dog drink from, perhaps you should not consider Le Creuset! It's a quality product that deserves to be treated as one. Also, if you can't pronounce the name, don't buy it!
