American cooks’ interest in Italy’s regional culinary styles continues unabated. Although many Italian Americans’ roots lie in the Naples region, adaptation to American ingredients and foodways has obscured the real traditions of Neapolitan cooking. Iengo makes optimum use of typical Neapolitan staples: olive oil, mozzarella, pasta, and the ubiquitous tomato. Cheese, prosciutto, eggplant, ricotta, fava beans, and mushrooms all play parts in a wide variety of sauces for pasta. Meats include rabbit, sausage, veal, and beef. Naples’ salt cod shows up in several guises. Pizza and bread, central to the Neapolitan diet, put in an appearance. A few desserts appeal to sweets lovers, including rich cheese-stuffed sfogliatelle. I just received this book and I am already in love with it! The pictures of the city, its people and the glorious, vibrant food - such a lovely presentation. Beyond the excellent recipes of the traditional food of Napoli, well-known fare such as egg-plant parmigiana to baccala, this book truly represents the real Napoli, making me miss it all the more. I highly recommend this to any one who misses the city, wants to learn about the city, or wants to take on learning more about Italian cuisine region by region. Beautiful color photography and very accessible ingredients and recipes. Thank you Iengo!

I found this book to be very easy to understand and, the short description for each section of the book are very interesting. The receipes are easy to understand and are from the region of Italy where my parents are from, so I am very happy with my purchase. I also purchased one for my daughter-in-law. She too, enjoyed it.
