After nearly a decade, my 5 quart saute pan needed to be replaced. After looking around, I picked this one because of it's mid-range price and reviews I've read of this line of pans.

As you would expect with a disc based pan, it heats quickly and evenly. I cook on a gas range and even heating is very important to me.

The lid fits nicely, it's not as highly domed as my last pan's lid was, so I do have to be a bit more careful about how much food I put in it. The handle on the lid is big enough to easily grasp it using a potholder.

The handle on the pan stays cool to the touch.

I love the shape and appearance of this pan, and how well it heats. Since this size pan is the most used pan in my kitchen, if I decide to pick up a second one, it will be another one of these. I use these a lot for quick stews, the wide base makes it easy to saute the meat, then add in the rest of the ingredients, cover and let it simmer until done.

Call it a mid life crisis. I found myself starting to look around for more excitement in the kitchen. I was getting tired of the same-old, same-old with the entry level unit I started housekeeping with. Thin, grey and tired, it just never performed well, but I had settled for it for a long, long time. Buying a Corvette convertible seemed too "desperate old guy-ish". And expensive. So did dating twin redheads. I felt stuck.

Then one day while I was cruising Amazon, this gorgeous, shapely thing caught my eye. I couldn't stop looking. Not as expensive as a professional model, but still curvy, with the promise of many great things to come. It just seemed too easy. I was not to be disappointed. I made plans for a discreet delivery to my home, and my life has already begun to change. I've shamelessly cast away the old workhorse and put my new model through paces only a pro could handle. I can't wait to get home at night to see what we can cook up together!

A guy can always hope for the ultimate and if I had one critical thing to say about my new partner, it would be the lid seems a little loose fitting, but no deal breaker by any means. The advantage of the revealing tempered glass is that you can see what's going on inside it without ever having to guess. No more dramatic boil overs like the old days. "You're just supposed to know" is a thing of the past.

A little heat will go far with this unit, thanks to it's aluminum encapsulated base which keeps the heat uniform. If you've never used stainless cookware like this, about the biggest mistake you can make is to run too hot too quickly. Take the time to develop a "feel" for the pan, and you won't find yourself cursing in the morning, feeling inadequate and wishing for your old lifestyle back.

This is a great mid-priced pan. Heats evenly. Cleans easily. The handle stays cool. The lid might slid off if you lift it off the stove to fast. I've had this for over a year now and I love it! It's my everyday pan. I've owned expensive non-stick pans like Calphalon, and they don't last. I still have an everyday Calpholon pan and I barley use it. It's the Cuisinart pan I use. For the money, I would highly recommend this pan as an everyday pan. You wont be disappointed.

I pull this thing out for fancy home cooking for the last eight months, and I haven't had a single disappointment with it. I use bamboo and only hand knit cloths on it, it still looks new and shiny with only a few scuff marks on the bottom. I mostly use it for searing and deglazing, most of my pans are cast iron and you can't really put acidic things in cast iron or deglaze with good results. This heats up faster than my cast iron and my kitchen doesn't seem as hot when I'm done cooking, so I probably use less energy and should cook with it more. I'm impressed with it enough that when I have the money I'll be getting more Cuisinart stainless steel items to replace my little teflon sauce pans and dutch oven. I wish I had heard more about techniques with stainless steel and cast iron cooking when I was younger, now I feel like my ignorance confined me to a couple of decades of eating dog food.

This is a nice pan for the price - it's not a top-of-the line pan, but it's perfectly fine. It heats evenly and cleans up well. The only word of caution is that it transfers heat very easily - perhaps a little too easily, so while it's fine for food cooked at high temperatures, it might be difficult to simmer at low temperatures unless you have a heat diffuser (assuming you cook over a gas flame). Maybe not such an issue with electric stoves (?). The pan also makes quite a bit of noise as it heats up - a sort of "tinking" noise as the metal expands. Doesn't seem to affect function, but it does make me wonder how durable the pan will prove to be over the long-term.
