Product Description

Amazon.com

Known in France as a fait tout (cooks everything), this pan will be one of your kitchen staples if you love those rich, homemade sauces the French are known for. The Windsor pan's flared sides provide a concentrated heat in combination with a large surface area, which is perfect for reducing or thickening when making sauces. The copper sandwich bottom guarantees quick and even heat, but watch for scorching while you're adjusting to its rapid conductivity. It's dishwasher-safe; even if you do scorch a time or two, there won't be any extra scrubbing on your part. --Jill Lightner

This little pan is really two pans in one. Its windsor shape of a tapered bottom gently sloping upward to almost twice the diameter at the top means you can create sauces as various gourmet recipes intend and as the product description and another reviewer testify. It also means, however, that you can use it in lieu of purchasing a separate 1-qt saucepan. The actual volume it holds is deceiving when you look at it. In addition to things already mentioned in other reviews, it holds a regular or small can of vegetables or soup without problem, boils 6-8 small red potatoes without spilling over, scrambles 2-3 fluffy eggs (the stir method) with plenty of room, and it's perfect for morning porridge. The long hollow stainless steel handle stays cool and keeps you far enough away from the burner so that long-standing stirring doesn't create a problem.
As with all of Cuisinart's Everyday Stainless Steel line, not only will this pan go in the oven, but also it cleans up so easily people will get tired of hearing your raving "I don't believe it" experience. The secret is hot water. Although the hottest water from the tap will work, pouring boiling water into the pan removes food residue when you're finished cooking, and pouring boiling water after you've washed it tends to remove "shadow" marks that occur from use. It is dishwasher safe, but in most cases, for me, hand washing works better than finding a place in the dishwasher. It's just that easy.
The only drawback is the absence of a lid, but if you have other Cuisinart saucepans or are thinking of purchasing the next size up, the 2-qt lid fits just fine.
For the price, this aluminum-free copper core little pan is a real deal must in every kitchen whether heating small portions, warming up leftovers, cooking for one, or creating that great sauce to perfection.

I have been very happy with my set of cuisinart everday stainless, the only thing missing was a small pan to make sauces in. I saw this pan on Amazon and picked it up last week, I have used it several times since then and I am extremely happy with it.
It is the perfect size to make hollandaise, gravy, or to make two small servings of soup.

decent, dense bottom; but the hollow handle transfers all the heat right into it, making it too hot to handle.
