With its "mirror finish," this casserole seems almost too beautiful to use, but it's designed to shine through a lifetime of hearty one-dish meals. The exterior is sturdy 18/10 stainless steel, composed of iron, 18% chromium, and 10% nickel. Stainless steel is nonreactive, so casseroles don't have any metallic undertones, and the surface won't rust or discolor. Although plain aluminum heats unevenly, this casserole has a solid copper bottom sandwiched between the stainless steel for superior heat conduction. Copper's responsiveness gives the chef greater control over temperamental dishes--but the aesthetic potential of this casserole isn't limited to culinary artistry. With its sleek lines and gleaming finish, it also makes an attractive serving dish, right from the oven. While a dishwasher won't dull stainless steel, be careful with metal utensils. Although they won't affect the performance of the dish, they can scratch the pan's surface.
