With sloped sides to expose a lot of cooking surface, this deep (3-3/4 inches), heavy stir-fry pan resembles a flat-bottom wok. A bit of oil, some flavorings, and vegetables, meats, tofu, seafood, or poultry tossed over high heat emerge as a big meal. Use this pan for any frying task; because it functions equally well on the stovetop or in the oven (up to 450 degrees), it also serves as a good browning-and-roasting pan. Its nonstick surface ensures that browning creates bits to flavor sauces but doesn't cause vigorous cleanup. The aluminum exterior, anodized for hardness and durability, and the nonstick interior sandwich an aluminum core that conducts heat rapidly and evenly across the bottom and up the pot's sides. This permits cooking at lower temperatures and prevents scorching. Also, rivets secure stay-cool stainless-steel handles permanently. Washing up is a breeze, but to preserve the interior, use only wooden or plastic utensils.
