With its tight-fitting lid in place to prevent evaporation, this versatile pot slow-cooks soups, stews, and chili. Because it functions equally well on stovetop or in the oven (up to 450 degrees), it also braises meats, poultry, seafood, and vegetables. In canning season, it simmers fruits and vegetables, and its nonstick surface is ideal for sticky dishes such as pot roast, macaroni and cheese, and polenta. The aluminum exterior, anodized for hardness and durability, and the nonstick interior surround an aluminum core that conducts heat rapidly and evenly across the bottom and up the pot's sides. This permits cooking at lower temperatures and prevents scorching. Rivets secure handles permanently. The pot is handsome, too, with its matte-finish gray exterior, charcoal gray interior, and mirror-finish, stainless-steel handles and lid. Washing is a breeze, but to preserve the interior, use only wooden or plastic utensils.
