Four things that I'd like to share about this knife
on January 28, 2015
Four things that I'd like to share about this knife. One, the handle is very thin (width-wise) and literally rotates in my large hand when I use this knife in Santoku chopping style. I have to hold my thumb on the ridge of the knife to prevent it from cupping (rotating) in my hand, but that is very cumbersome. I suppose it would work OK in a smaller hand (I am large glove-size). Two, don't leave this knife in your sink overnight. Mine developed a tiny precursor to a rust spot. Three, the knife arrived with a super tough oil-type coating on it. I mean the water droplets would bead off of the blade as if it had Rain-X applied to it. I don't want anything other the pure steel touching my food. With enough washing the coating finally washed off. Four, the handle and the metal shank of the blade are not machined level - the bottom of the shank protrudes past the black handle by 1/8 of an inch. The only thing I like about it is the classic Santoku shape. Three weeks after an occasional use on my bamboo cutting board it got dull. I'll square off the cutting edge and recycle it. There you have it.
