After having used All-Clad pots/pans with much success professionally since the late 70s and in my home, but at a later stage (cooking professionally, I did not used to cook much at home) I had the opportunity to cook with the Cuisinart Copper Classic line at a friends house and was amazed at the performance.
Needless to say, they have become a favorite of mine too at home.
After looking for a pan suitable for Paella and finding nothing but thin, stamped metal pans, I came across this Cuisinart braizer and like it alot.
Not only for Paella, but also for Risotto and other tasks.
I especially like the domed lid.
Although the Copper Classic line was panned (no pun intended) by Cooks Illustrated (the same people that think there is no difference between real & artificial Vanilla;-), I am thoroughly delighted with it.
If I would want them to change anything, it's the handles that are somewhat slick, but it does not make a difference with the braiser.
If you compare the prices with belgian stainless clad copper cookware, this has to be the bargain of a lifetime.
Although, don't spread it around since I still want to purchase a few specialty pieces and hate to see the street prices shoot up into All-Clad territory.
