Stainless steel is the classic material of the professional kitchen because of its durability and versatility. Cuisinart has updated this timeless material with a modern nonstick surface to complement today's lighter cooking. The multilayer surface is even oven-safe, under some circumstances. This fry pan's handle has a ventilated design that keeps it cool to the touch, even after it's been cooking on the stovetop for a while (be careful if you use it in the oven, though). The large capacity of the pan allows you to include all the veggies wanted for a favorite Asian-inspired dish, but be careful not to use too high a flame if following a recipe meant for a traditional wok--unlike a thinner iron wok, the copper sandwich bottom allows heat to be conducted quickly and retained longer. The nonstick surface is extremely easy to clean, and the pan can even be placed in a dishwasher. I bought this non-stick pan for use in making Chinese food. It is not only GREAT for stir frying, but especially for fried rice. Since the interior is non-stick, I don't have problems with the rice sticking like in other pans I have tried. However, I use this pan for much more than just Chinese cooking. I have used it to saute' potatoes, squash, and even cook omelets. It is all purpose pan.

Also, I have never had a pan come out of the dishwasher looking as great as this one. Mine still looks brand new and I have washed it many times. The exterior mirror-like surface is still beautiful and the non-stick surface looks as though I have been washing it by hand. I LOVE this pan for its versatility and ease of care. I would recommend it highly.

I hadn't had the chance to use this pan when we had our little quake a couple weeks ago and my pot rack came lurching out of the ceiling, dumping all my pans on the floor. This one was on the bottom of the pile (landed on a hard tile floor)and it didn't even get a scratch! In the weeks since, I seem to be reaching for it practically every night no matter what I cook. From crepes to stirfry to bolognese sauce, it works like a champ and is supremely easy to wash; it really does just wipe clean. Best of all, it's at least half the weight of any of my other pans--my arthritic wrists are awfully happy. Capacity-wise, I'd say it tops out at 4 to 6 portions. The brochure in the box cautioned against using high heat, but I haven't had any of the mentioned issues (like food burning) when I crank the temperature.

I bought this stir-fry pan based on some good reviews from a leading consumer magazine. It's a nice-looking pan and has the right weight I prefer. Cleaning is easy too. The major problem with my first pan was the non-stick coating started peeled off just after a couple of monthes. I called Cuisinart and they provided an exchange. Now half a year past and my second pan lost the coating on the bottom again. I just use this pan 2 or 3 times a week and I don't know whether I should call Cuisinart again or start shopping for a different brand.
