Cuisinart's 3-1/2-quart sauté pan, which comes with a fitted stainless-steel lid, is the perfect size for making one-pot meals. The pan has a bottom inlay of copper sandwiched between two layers of stainless steel for quick heat distribution, on top of which is a multilayer construction of stainless steel and a nonstick cooking surface. This construction, called the Excalibur system, results in lasting food release, so less oil or butter is needed when cooking.
The heavy-gauge stainless-steel handles are heat-resistant, and the handle hole makes it easy to hang the pan from a cookware rack. Cuisinart recommends using a low to medium burner setting when cooking with this pan and recommends the use of plastic or wooden utensils. --Julie McCowan
