Quick and uniform in its heat distribution, Cuisinart's Multiclad stainless-steel line uses a triple-ply construction throughout the entire cookware base and body. An aluminum core sandwiched between layers of 18/10 stainless steel creates an exceptionally durable pan that conducts heat evenly all the way up the sides. Highly polished, the interior stainless-steel layer resists sticking, corrosion, and staining. The pan's exterior has an attractive brushed finish, accented with a gleaming band just below the rim.
Braise lamb shanks, short ribs, or a head of cauliflower in this 12-1/2-inch braising pan with lid. A tapered rim aids in drip-free pouring, and the tight-fitting domed lid seals in steam and heat to keep cooking liquids from evaporating. The riveted stay-cool handles on both pan and lid are generously sized and comfortable to hold. The piece is dishwasher-safe, oven-safe to 500 degrees F, and attractive enough to take to the table.
