Culinary Expressions is a gem. Its clarity and simplicity gove the home cook confidence, and its wide variety of preparation styles, especially for fish and chicken, inspire creativity. The 20-minute (baking time) recipes fit into today's hectic, tightly scheduled world. This book reminds us of the enjoyment and satisfaction that preparing a meal for family and friends can bring.

I recently purchased two copies of this book as gifts. If you want to be seen as
some kind of culinary wizard, I suggest you get a copy. The recipes are
simple to follow and the results are absolutely delicious. They are also easy
to split in half when cooking for 1 or 2 people. The author is from Rhode Island
and so I had purchased his original Chicken Expressions book a long time ago.
It was nearly worn out from use, so I was thrilled when he came out with this
version which includes his seafood recipes, as well as appetizers, soups, side
dishes and desserts. An excellent value!

Chef Leclair is a Rhode Island treasure! In his latest book (his third), Culinary Expressions, he shares many reminiscences about his long love affair with food, entertaining, and the restaurant business. Stories and memories are folded into a comprehensive selection of 270 recipes that even the most time-stressed person can successfuly master with confidence. Each recipe is preceded by a brief but very useful explanation or anecdote about the dish. If you love food (and who doesn't!)and you love to cook, Culinary Expressions will provide easy instruction on how to prepare unique and delicious entrees under the expert guidance of a master chef. Buy it, use it and enjoy better food now!

We use it all the time when cooking for our guest/family. Every time we are thrilled with the short prep time and the delicious tasting dish. 15-20 prep then 20 min cook time and your ready to serve.

I have many very good cooking book But this one is now my favorite.

This book is an excellent read, entertaining and the meals are easy to make. They are impressive to guests and have often received a WOW from those that I have entertained in my home.
I recommend this book and wish that all the previous expensive ones that I purchased in the past were as good and easy as this one.
Truly a wonderful book and one to give to friends as a gift.
