The Masters Collection Hyde Park chef's knife makes some of the kitchen’s most mundane tasks an artful experience. Perfect for slicing, chopping, mincing and dicing fruits, vegetables, onions, and herbs, as well as for slicing meats and poultry. The exclusive balance-forward handle and streamlined bolster are contoured for superior control and comfort. Proper balance and strength are achieved with a full tang (the solid-piece of steel from the tip through the handle) that runs the entire length of the handle. Created from a single-piece of high carbon, no-stain german steel, the blade resists corrosion and holds an extremely sharp, easily maintained edge.

Not much to be said, other than this knife comes ground to the correct angle and very sharp. It also holds its edge for quite a while. It isn't the heaviest chef knife around, but if you are accustomed to the cheapo gift set knives, your hand and wrists will need to get adjusted to the heftiness of a professional instrument; expect a slight reduction in speed until your muscles catch up. But when they do, you'll wonder why you didn't get a knife like this before, it makes cutting so much easier. A major advantage to a heavy, sharp knife is that it doesn't hurt your index finger because you use less force to cut, the knife's weight and edge does the work for you, and it remains stable. So don't feel the big knives are only for the big guys like Mario, they are actually safer to use!

Bought it in Nov. of 2010, honed it but I have yet to sharpen it. With daily use, and some abuse, it is still going strong. Perfectly balanced and super sharp. Just about as good as my Wusthof Classic.

I purchased this knife because it received excellent reviews. I must have received a defective item, because it was totally dull. Would not cut vegetables, chicken, nothing. It was worthless and was returned today.
